Milking the Bufala

The New York Times contends that "buffalo mozzarella from Italy is perhaps the most difficult cheese to replicate." If sex matters to you, though (grammatically speaking!), in Italian the formaggio squisito is referred to as mozzarella di bufala and is the feminine gender.

And of course, unless biology has somehow miraculously switched gears, it's the female of the species that provides buffalo milk.
