Jailhouse Meat

You don't have to be doing time behind bars to enjoy Carne da Galera, a savory herb-laden pot roast. According to Kyle Phillips, the About.com Guide to Italian Food: "...in the course of a cooking show, Dario Cecchini, Panzano in Chianti's butcher, presented a dish whose name literally translates as Jailhouse Meat. The name comes, he says, from the fact that the cuts involved are less noble, and tended to go bad quickly in the days before refrigeration."

Cecchini is known as "the world's most famous butcher," and his butcher shop L'Antica Macelleria Cecchini, in the Chianti countryside outside of Florence, is a culinary shrine.
